Few foods carry their homeland in their name the way Mithila Makhana does. These plump, ivory-white foxnuts are popped from the seeds of the prickly water lily (Euryale ferox) that grows in the still ponds and wetlands of north Bihar — and in 2022 they earned a coveted GI tag, recognising what every Maithil household has always known: the best makhana in the world comes from this soil.
The work behind each fluffy puff is quiet and back-breaking. Mallah farming families wade chest-deep into the ponds of Darbhanga, Madhubani and Saharsa to gather the seeds by hand, then sun-dry, roast and pop them over open flame — a single skilled tirhut popper striking the hot seed at the exact moment it bursts into a light, crunchy pearl. It is one of the few crops still made almost entirely by hand, passed down through generations along the Kosi and Kamla rivers.
We source only the large-grade (5-sutta and above) pops — bigger, lighter and crisper than the makhana you find loose in city markets. Naturally gluten-free, low in fat and rich in plant protein, they are roasted, not fried, which makes them the snack Bihari mothers reach for first: tossed in a little ghee and rock salt for evening chai, simmered into a creamy makhana kheer at festivals, or offered as prasad during fasts and vrat.
