The result is unmistakable: crisp and shattering at the first bite, then turning soft, milky and melt-in-the-mouth as it warms on your tongue.
In Bihar, Khurma is more than a sweet — it is a marker of occasion. It appears on thalis during Chhath and Diwali, is packed into steel tins for relatives travelling back to the village, and is the first thing offered to guests alongside a cup of strong chai. Its long, sturdy texture made it the traveller’s sweet of an earlier era, surviving days of train journeys without losing its character.
