Description
A near-forgotten festive jewel of Bhojpur
Belgrami is one of Bihar's quietest treasures, born in the small town of Udwantnagar in Bhojpur district — the same soil that gave India the freedom fighter Veer Kunwar Singh. For generations it was the sweet of weddings, Holi and Diwali across Ara and the Bhojpuri belt: the mithai a family carried when it had something to celebrate. Often mistaken for the spongy, syrup-soaked chhena sweets of Bengal, Belgrami in fact follows the older East-Indian halwai craft, where patience rather than richness is prized. Today only a handful of families in Udwantnagar still practise its slow art, which makes every box a small act of preservation.
What makes ours special
We source Belgrami directly from traditional Udwantnagar halwai families who still crystallise it by hand in small batches, never machine-moulded. Fresh cow's-milk chhena is kneaded smooth, cooked patiently in cardamom-scented sugar until the syrup turns to fine grain, and set into firm pieces with a delicate, almost crumbly bite. No colours, no preservatives, no shortcuts.
Ingredients
Fresh chhena (cottage cheese from cow's milk), sugar, green cardamom. That is all.
How to eat and store
Serve at room temperature with evening tea, after a meal, or as part of a festive thali. Keep in an airtight container in a cool, dry place; refrigerate in humid weather and bring back to room temperature before serving. Best enjoyed within its shelf life for peak texture.
Shelf life
15 to 20 days from dispatch — a true dry sweet that travels well, unlike most chhena mithai. Net weight 400g.
