Description
Katarni is Bihar’s most celebrated aromatic rice, grown for generations across the Jagdishpur, Sabour and Amarpur belts of Bhagalpur, Banka and Munger. Prized for its fine, short grain and a natural fragrance that fills the kitchen long before the pot is opened, the variety carries a Geographical Indication (GI) tag that certifies its singular soil and climate. This same heritage paddy is gently pressed into chura, the soft, aromatic flattened rice that sits at the very heart of Bihari food culture and has been a household staple in the region for centuries.
What makes ours special: we source single-origin Katarni paddy directly from farmer collectives working to revive a variety that very nearly disappeared in the 1990s, when higher-yielding hybrids pushed it to the edge of extinction. The grain is parboiled, sun-dried and roller-pressed in small batches, so every flake keeps its perfume and its tender bite. There is no blending with cheaper hybrids and no polishing agents whatsoever.
How to eat it: Katarni chura is the soul of chura-dahi, the dish every Bihari household serves at Makar Sankranti. Simply soak the flakes for a few minutes, fold in thick curd with jaggery or sugar, and top with banana. It is equally good as a quick poha tempered with mustard, peanuts and curry leaves, or dry-roasted with gud as a wholesome travel snack that keeps for days.

How to store: keep in an airtight container in a cool, dry place away from moisture and direct sunlight. Reseal the pack tightly after every use to protect the aroma.
